La Table de Haute-Serre is a stone cellar restaurant featuring a delightful cuisine associating the local products, in an amazing atmosphere with contemporary furniture and decor mixing with traditional stone walls.
 
The Chef Thierry Pszonka, Maître et Cuisinier de France, proposed a refined and inventive cuisine which skilfully combines terroir and modernity. The cuisine follows the seasons to enable people to taste the products that this extraordinary land offers.

Head Chef Thierry PSZONKA, Maître Cuisinier de France

Thierry Pszonka was born in Besançon and his parents used to be in the restaurant business.   
 
This 43-year-old chef has already a brilliant experience.
After being taught by famous masters like Jean Crotet at L’Hôtellerie de Levernois in Beaune, Jacques Lameloise at Chagny and Michel Berring at the Patin d’Or in Luxembourg, Thierry left France and settled in Argentina. He has worked there for 14 years in several prestigious restaurants. He also owned his own business which was awarded several times one of the three best restaurants in the country.   
 
After 14 years spent in Argentina, Thierry wanted to come back to France and looked for a new challenge. He found it at Château de Haute-Serre with a new concept of « cellar restaurant » in the Historical vineyard of Malbec. An amazing opportunity to link the two lands of the Malbec grape which is growing in popularity all around the world!

Thierry Pszonka is married to an Argentinean woman and he keeps in touch with the country of tango through his consulting activities for restaurants and schools.
